Vegetable Garden Soup

A delicious vegetable garden soup that is a healthy meal for a family of 4.

1 small cauliflower broken apart into palm sized pieces
2 cups of green beans cut in 1 inch lengths
1 small onion
3 onions chopped
2 stalks of celery chopped
2 carrots chopped into small cubes
3 potatoes chopped into small cubes
3 cloves of garlic
½ parsnip root
½ cup parsley chopped
1 soup bone or small short rib
Dash of black pepper
Peppercorns
1 packet of Bouillon powder (beef flavor)
6 to 8 cups of water

In a pot, add water, peppercorns (5 or six), soup bone or short rib, garlic cloves, whole small onion and parsnip root. Let boil for about 15 minutes on medium-high. Add green beans, carrots, celery and potatoes. Boil on medium heat until somewhat tender but not completely. Add cauliflower and packet of Bouillon power, preferably beef. Boil on medium heat till cauliflower is tender but not falling apart. Take off heat and sprinkle over top the chopped parsely. In a frying pan, add a little oil and fry chopped onions until almost a dark burned colour and add to soup for extra flavour. Stir gently. Let cool slightly. Serves a family of 3 or 4.
